Jolly Christmas Sweet Corn Casserole Recipe

Hello ladies!

Christmas is just around the corner and I know even if it’s not the actual date yet, we’re so stringed with so much work and preparations to do, not to mention Christmas parties here and there to attend to. Cooking for Noche Buena can be very taxing. I know you’re thinking of coming up with the same recipe as last year’s as it is easy to prepare and you won’t miss a thing about its ingredients anymore, right? And guess what? I’m thinking the same.

But I think, despite my demanding schedule, it would be so nice to try out something new, at least on my Noche Buena table. Something easy to do with easy to find ingredients. Ingredients we can just pick along the grocery shelves on a quick trip.

So today, I am going to share with you how to cook Jolly Christmas Sweet Corn Casserole. This is my second time cooking this and I thought it would be a good alternative to our usual Christmas pasta. It’s same tummy-filling but with creamy, cheesy sweet corn aroma. I guarantee this is delicious. I baked this twice just to prove that it's truly delectable and worth a space on your noche buena table.

This recipe can be enjoyed by four to five people. My kids love it, the lightly charred cheese made it more umani-ish. My version came out to be a cross between souffle and pudding with burnt cheese texture. Try making it!


So let’s start cooking;

JOLLY CHRISTMAS SWEET CORN CASSEROLE

Ingredients:

1 425g Jolly Whole Corn Kernels, drained
1 425g Jolly Sweet Cream Corn
1 200g Jolly pieces and stems mushrooms, drained and chopped coursely
1 cup Jolly Cow fresh milk
4 fresh eggs
1/2 of 165gms cheese, grated
1 cup all-purpose flour
3 tbsps. white sugar
1 tbsp. baking powder
2 tbsps. Dona Elena Olive oil
1/4 tsp. salt


Instructions:


Pre-heat oven to 350°F

Grease a 9x6 oven dish (if you have a square dish that would be a nice alternative) with a small amount of olive oil.

In a mixing bowl, add all dry ingredients, add beaten 4 fresh eggs and mix well. Add in the milk and the olive oil. When blended, add the chopped Jolly mushrooms and the cans of Jolly cream corn and drained Jolly corn kernels. Blend all ingredients together until flour lumps disappear.

Transfer the batter to the baking dish and top it with grated cheese.

Bake for 45 minutes or until the cheese on top is lightly brown.
